Mincemeat Pie

Mincemeat Pie is a Traditional Favorite During the Holidays. 

1 lb. Spring Glen Mincemeat pie filling

1 1/2 cups chopped walnuts

2 apple - peeled, cored, and chopped

1/2 cup packed brown sugar

1/4 cup rum

1 tablespoon lemon juice

Homemade or Two Prepared Frozen or Refrigerated Pie Crust (One will be used for the Top).  If you buy the prepared pie crust, most packages contain two crusts.

Combine mincemeat, walnuts, apples, brown sugar, lemon juice and rum in a bowl. Mix well. Cover and refrigerate overnight. Preheat oven to 425 degrees F Take filling out of refrigerator and let come to room temperature. Stir filling well and pour into Pie Crust. Top with full crust and make slits or make a lattice top. Crimp edges. Bake in preheated oven on low shelf for 40 minutes or until golden brown.

Mincemeat Cookies

A holiday treat with Spring Glen Mincemeat

1 cup Vegetable Shortening

1 1/2 cups Sugar

1/2 teaspoon Vanilla Extract

3 eggs

3 1/4 cups All Purpose Flour

1 teaspoon Salt

1 teaspoon Baking Soda

1 cup Chopped walnuts

1 1/2 cups Spring Glen Mincemeat

Preheat oven to 350 Cream shortening, sugar and eggs together. Beat in vanilla. Sift the flour, salt and baking soda together, and add to shortening mixture. Mix until well blended. Stir in the nuts and mincemeat and mix well. Place spoonfulls on a greased cookie sheet. Bake 8 to 10 minutes until golden brown.
